Raspberry Rocks - Chocolate Raspberry Bars | Co-Mac Kai
Ingredients
100 grams of Frozen Raspberries (or any other frozen berries if you get stuck, Blueberries will work well!)
50 grams of Rolled Oats
35 grams of Shredded Coconut (if you’re not a fan of Coconut you can substitute this with nuts to get texture and flavor, great alternatives are Macadamia or Brazil Nuts)
30 grams of Sunflower Seeds
1 Tablespoon of Maple Syrup (Or Honey if you prefer)
150 grams of Dark ChocolateMethod
Add all ingredients apart from Chocolate into a food processor and blitz until combined. (This is quite a thick mixture so you may need to scrape down the sides a few times)
Grab a plate lined with cling film and press the mixture into an even square shape (make this to the thickness you would like your bars). Cover with another piece of cling film and leave in the freezer for a couple of hours (until the mixture has hardened)
Once your mixture feels set, cut it into 8 bars. Melt 75grams of your chocolate and pour this over (make sure the chocolate does not meet and set) Pop into freezer for another 5 minutes until your chocolate has hardened. Take out the bars and flip them upside down. Melt the remaining chocolate and pour over top, set these again for another 5 minutes.
Once set, these are ready to enjoy!!! The great thing about these is they keep well in the freezer-so don’t worry about trying to eat all 8 in one sitting ????
